C and I were both in the kitchen just now, and C starting reminiscing about how she just used to be able to rustle up cakes without a recipe.

So of course this means I have just put a traybake in the oven. (Photos to follow, I hope.)

Well, it is a chocolate cake-ish thing that is tasty, so in that sense it is entirely successful.

But it is not by any stretch of the imagination chocolate concrete. I did not have the right pan. This shall be rectified. There shall be chocolate concrete in this house!

I was fed up of not having cake, so I made some muffins:

Gluten free dried fruit spiced American muffins
Makes 8-12 muffins, depending on the size of your muffin pan



Ingredients

Dry
1⅓ cup all purpose plain gluten free flour mix (I used Dove's Farm plain white)
⅔ cup high protein flour (I used soya, but you could equally use quinoa, amaranth, chestnut, etc.)
¼ - ½ cup caster sugar (to taste)
2 Tbsps baking powder (or a 1:2 blend of baking soda:cream of tartar)
1 cup added yummies of your choice (I used ½ cup raisins and ½ cup sultanas)
spices etc. to taste (I used powdered cinnamon, coriander and ginger)

Wet
½ cup oil of your choice (I used cold pressed raps seed oil)
1 cup milk or milk substitute of your choice
1 egg or egg substitute

Note for non-US cooks: 1 cup = appr. 250ml

Method

  1. Preheat oven to 180ºC.

  2. Oil your muffin pan.

  3. Mix all dry ingredients together extremely well.

  4. Mix all wet ingredients together extremely well.

  5. Add wet ingredients to dry ingredients and mix only as well as needed to get all dry ingredients wet.

  6. Spoon mixture into muffin pan, leaving a small gap between the top of the mixture and the top of the pan.

  7. Cook for 20 mins.

  8. Enjoy!

These won't store well, so eat within 24 hours :-)
